In 2023, Popsicle café, on Donsö in the southern part of the Gothenburg archipelago, is launching a project on “The sustainable seafood of the future” together with Karolina Martinsson, who is both an advocate for sustainability and a seaweed diver. Karolina has spent many years working to create a Swedish food culture where blue food is given a natural place on the plate. Throughout the year, they will be organising several events with visiting culinary guests, where you can taste and learn more about blue seafood from the Gothenburg archipelago and Bohuslän. From March onwards, healthy seafood such as ascidians, algae and minced herring will be included on the regular menu.
